Our dry-aged beef is stored in its own custom-design, dry-aging coolers where a complex process takes place, incorporating an intricate balance of time, temperature, air circulation and humidity. Over time – as the beef ages openly, exposed to elements inside the cooler – the beef’s enzymes break down and tenderize the meat, giving it a uniquely intense savory and sweet flavor and ensuring the utmost tenderness in every bite.

We suggest preparing the steaks using a fast, dry, cooking technique (such as grilling or broiling).

Locally, your meat will be wrapped in butcher paper for immediate consumption. If you live outside, your steaks will be sent to you via FedEx Standard Overnight or Priority Overnight. Non-perishable items are shipped with FedEx ground services. Please note that delivery times for each FedEx service very by area. Go to http://www.fedex.com/ for estimated delivery times.
